Monasteries and the Middle Ages

Columella had already written down a working method by about AD 70. So the interesting question about the medieval centuries isn’t how cheese was made — that was settled — but how cheese became a named, valuable, legally defended thing. How you get from “cheese” to Roquefort, with a king’s signature on it.

The short answer is monasteries, and I want to be careful about why, because the popular version gives them too much credit for the wrong thing.

What the monasteries actually contributed

You’ll read that monks invented the washed-rind cheeses, or invented aging, or invented Parmesan. That’s mostly the compression that happens when a story gets retold: institutions that kept records end up credited with everything that happened while they were keeping records.

What monasteries genuinely had was a combination almost nobody else in medieval Europe had, and it turns out to be exactly the combination cheese needs:

Surplus milk. Large landholdings, large herds, and a community whose members were not each drinking their own cow’s output. Surplus is the precondition — no surplus, no cheese worth aging.

Literacy. They wrote things down. A method that exists only in one person’s hands dies with that person; a method in a manuscript survives, gets copied, gets carried to a daughter house three hundred miles away, and gets improved on by someone who never met the originator. Cheese is unusually dependent on this, because the feedback loop is so slow — if a change takes two years to evaluate, you cannot learn the craft by trial and error inside one working life without records.

Continuity. This is the one I think matters most and gets mentioned least. A monastery outlives its monks. An institution that expects to exist in fifty years can start a cheese that takes three, can maintain a cave, can keep a herd and a strain of culture going across generations, and can afford to have a thousand wheels sitting in a cellar earning nothing yet. A single household cannot take that risk. Aging is a capital problem before it’s a technical one.

And a labour force on a schedule, which is what turning and washing a cellar full of wheels actually requires.

So: not invention. Scale, memory, and patience — the three things that turn a craft into a product. The monasteries industrialised cheese several centuries before there was any industry.

Parmigiano-Reggiano: the surplus problem, solved with geometry

The best-documented case is the one that became the most famous cheese in the world.

From the twelfth century, Benedictine and Cistercian houses in the country between Parma, Reggio Emilia, Modena and Bologna were making a hard cheese in large vats. They had what the region gave them: abundant water, good pasture, and salt from Salsomaggiore. And they had the problem this whole section keeps returning to — more milk than could be used before it spoiled.

Their solution is a lovely piece of practical physics. To make a cheese that keeps for months rather than weeks, they did two things: dried the paste harder, and made the wheels much bigger.

The second one is the clever half. A bigger wheel has proportionally less surface for its volume, so it loses moisture more slowly and evenly, and its interior is buffered against whatever the cellar is doing. Scale up the form and you don’t just get more cheese — you get a different, longer-lived cheese out of the same make. Every enormous alpine and Italian wheel is that insight, and it’s the same reason the wheels get bigger as you climb into the mountains, which is the next page.

The documentation, precisely: the firm attestation is a notarial deed drawn up in Genoa in 1254, mentioning caseus parmensis — Parmesan cheese, named for its place, in a legal document about trade. The twelfth-century monastic origin is the traditional and widely-repeated account and is consistent with everything else, but 1254 is the date with a document behind it. Some sources say “the first written record dates to 1200”; I can’t source that as firmly as the 1254 deed, so I’d treat 1254 as the number to quote.

Note what that deed is, though. Not a recipe. A commercial instrument, in Genoa — a port, hundreds of kilometres from Parma. By the mid-thirteenth century this cheese was already a traded commodity identified by origin. By the fourteenth it was moving through Romagna, Piedmont and Tuscany and out to Mediterranean ports.

Names became places, and places became property

That is the real medieval story: cheese stopped being a substance and became a set of proper nouns.

It makes sense once you accept that aged cheese is largely a product of where it aged. Cellar temperature, humidity, airflow, and the particular population of moulds and bacteria living in that cellar’s walls are not portable. Two dairies working an identical recipe in different caves get genuinely different cheeses. So the place name isn’t marketing — it started as the most accurate available description of the product.

And once a name is accurate and valuable, somebody will use it who hasn’t earned it. Which brings us to the document.

🔴 The 1411 charter, and the detail everybody drops

On 4 June 1411, Charles VI granted the inhabitants of Roquefort-sur-Soulzon a monopoly — and it is routinely described as the first appellation d’origine in history, the ancestor of every PDO on a modern label. That much is the usual telling, and it’s fair.

Two things about it are more interesting than the headline.

First: the monopoly was on RIPENING, not on making. The exclusive right the king confirmed was to mature the cheese in the caves of that village — the natural Combalou caves, whose fissures give a steady cool humidity and moving air that you cannot reproduce by wanting to. The milk could come from the surrounding country. The cave was the protected asset.

I find that genuinely striking, because it is the correct technical answer arriving six hundred years early. The thing that makes Roquefort Roquefort is not a secret recipe. It’s a specific set of ripening conditions and the organisms living in a specific rock. Modern PDO law is full of that logic — aged in this valley, at this altitude, for this minimum time — and the first instance of it got the distinction exactly right.

Second: the king was ratifying, not inventing. The charter’s own language grants the monopoly as the practice had been carried out “from a time immemorial” in those caves. This is not a monarch establishing an industry; it’s a monarch putting the law behind something the villagers had been doing for so long that nobody could remember it starting. The protection was renewed by Charles VII in 1457 and upheld down through Louis XIV, with the parliament of Toulouse ruling against imitators.

So the story isn’t “a king created the first protected cheese.” It’s “a practice got old enough and valuable enough that the law had to catch up with it” — which is how nearly every food protection in Europe actually happened, and a useful thing to remember when reading a label.

What I still can’t source properly

Two things I expected to be able to nail down and can’t, so I’ll flag them rather than write around them.

The fasting-rules argument. The usual claim is that church rules restricting meat on fast days made cheese enormously important as permitted protein, and that this drove monastic production. The logic is sound and the general shape is well attested — dairy’s status on fast days varied by period, order and region, and dispensations were bought and granted. But the specific, tidy version (“cheese boomed because of Lent”) is the kind of claim that gets repeated without a source, and I haven’t yet read a primary one. Treat it as plausible context, not established cause, until this page says otherwise.

“The monks invented the washed rind.” Repeated constantly about Munster, Maroilles, Époisses, Port-Salut and the Trappist cheeses, and I can’t find primary evidence for the invention claim as opposed to the association. Monastic houses certainly made and popularised washed-rind cheeses. That they originated the technique is a separate assertion, and I’d want it sourced before this section states it.
