The Guilds and the Alps
The previous page ended with the monks discovering that a bigger wheel is a longer-lived cheese. This page is about what happened when people took that idea up a mountain — and it turns out to be the best story in the history of cheese, because the wheel got so big that no single farmer could make one.
That constraint did something remarkable. It meant the cheese could not exist until the people had invented a way of cooperating. The institution came before the cheese.
500 litres, and nobody who had it
Comté is the clearest case, and the numbers are the whole story.
One wheel of Comté takes roughly 500 litres of milk. In the thirteenth century, in the Jura, no single farm had a herd anywhere near big enough to produce that in a day. You could not make this cheese by yourself. Not because you lacked skill or equipment — because you lacked cows.
So from the 13th century the cheese was made in fruitières: cooperative groups of producers who pooled the milk collected each day and turned it into cheese together. One of the earliest on record was founded in 1253 at Déservillers, in the Doubs, in the heart of Franche-Comté.
Look at what a fruitière actually had to solve, because it’s more than a milk collection.
Farmers took turns overseeing the collection and the make. When the cheese eventually sold — months later, after aging — the proceeds were paid out proportionally to what each farmer had contributed. Which means somebody had to record, every single day, how much milk came from whom, and everyone had to trust that record through a year of aging before anyone saw any money.
That is a cooperative, with bookkeeping, deferred payment, rotating duty and mutual trust — invented in the 1200s, in the mountains, in order to make a cheese. I find that genuinely moving. The technology here isn’t the copper vat. It’s the ledger.
And there’s a detail I’d have missed if I hadn’t gone looking: those daily gatherings were also a social outlet for farmers who would otherwise have been isolated all winter. The fruitière was the village meeting as much as the dairy.
The system was not a historical curiosity that got replaced. Fruitières are still the heart of Comté production today.
Why the wheels are enormous: three answers, all correct
So why make a cheese so big that it forces you to invent a cooperative? Because size buys you several different things at once, and in the Alps you needed all of them.
It keeps. The monastic insight from the last page: a bigger wheel has proportionally less surface for its volume, so it dries more slowly and more evenly, and its interior is buffered against whatever the cellar is doing. In a place where the season’s production has to feed you through a winter that closes the passes, “keeps for a year” is not a luxury feature.
It travels. Cheese made on a summer alp has to come down — and it comes down on an animal’s back or a man’s, over a track. Fewer, denser, more valuable units per trip is simply better logistics. A season’s milk concentrated into a handful of wheels is the most transportable form it can take.
The eyes need the thickness. This one is pure physics and I love it. Emmental’s holes are gas — carbon dioxide from Propionibacterium — accumulating in pockets inside an elastic paste. In a small wheel, the gas pressure dissipates before the holes can reach full size, because it’s too close to a surface. You physically cannot make a proper Emmental in a small format. The cheese’s most famous visual feature is a consequence of its dimensions.
And salt was scarce. Salt had to be hauled up the mountain, at cost. Alpine cheeses were therefore designed to be long-aged but comparatively low in salt — which is a real constraint shaping a whole family’s character, since salt is normally one of your two main levers for controlling ripening. Take that lever away and you have to lean on the others: a high cook temperature, a thoroughly pressed low-moisture paste, and time. Which is exactly what the cooked-pressed cheeses are. (I’ve seen this attached to a specific ancient date; I can’t source the date and don’t need it — the logic stands on the geography.)
🔴 And then a tax made them bigger still
Here’s the finding I went looking for, and it’s better than I expected — with a chronological catch that matters.
In the 19th century, export duties on Swiss cheese were assessed by the NUMBER OF WHEELS, not by their weight.
Read that again, because the consequence is immediate and slightly absurd. If the customs officer counts wheels, then every wheel you don’t make is duty you don’t pay. Make the same tonnage of cheese in half as many wheels and your export bill halves. The rational response is to make each wheel as large as you can physically handle — and Emmental wheels became, and remain, some of the largest cheeses on earth, at around 100 kilos apiece.
A tax rule left a permanent mark on the shape of a food. Not the flavour, not the method — the physical dimensions of the object, still visible on a cheese counter today.
The catch, and I want to be precise about it: this is a 19th-century mechanism, and the wheels were already large centuries earlier for the pooling, keeping, transport and eye-formation reasons above. So the honest version is not “cheese wheels are big because of taxes.” It’s: the wheels were big for good physical reasons, and then a nineteenth-century customs rule rewarded making them bigger. Tax explains the extreme, not the origin. I flagged this page in advance as “a tax and transport story,” which was half right in a way worth correcting on the page rather than quietly.
What the Alps actually contributed
Pulling it together: the mountains didn’t invent a technique so much as impose a set of constraints sharp enough to force a particular kind of cheese into existence.
Short season, long winter, hard transport, scarce salt, and herds too small to individually matter. Out of that you get: cooked, pressed, low-moisture, low-salt, enormous, long-aged cheese made collectively and sold on trust. Gruyère, Emmental, Comté, Beaufort, Appenzeller, Sbrinz — the whole cooked-pressed family is a set of answers to the same geography.
And the organisational half survived better than almost anything else in this history. The monastery cellars are museums. The fruitière is still how Comté is made.
