Storing & Cutting
Two jobs that look like housekeeping and are actually the last two steps of the make. A cheese that somebody spent eight months ripening can be undone in a week in a domestic fridge, and a cheese cut badly is a cheese half its buyers will get a worse piece of.
What you are actually fighting
A cut cheese has two ways to die and they pull in opposite directions.
Drying out. The cut face loses water to the fridge, which is a cold dehumidifier with a fan in it. A wedge left naked goes hard, then cracks, then tastes of nothing but salt.
Suffocating. Seal it airtight and you trap what the cheese gives off — moisture, lactic acid vapour, ammonia from a ripening rind — against its own surface. That is how a good brie turns into a puddle that smells of a cleaning cupboard, and how a hard cheese grows the slick, faintly soapy film people describe as “the plastic taste.”
⭐ So the target is not “airtight” and it is not “open.” It is a wrapper that lets a little gas through and almost no water — which is a genuinely awkward specification, and the reason a purpose-made product exists.
Cheese paper, and an honest note about its evidence
Two-ply cheese paper is the right tool: a porous outer layer that breathes, laminated to a thin inner layer that stops the cheese sticking and slows moisture loss. Every monger I have ever asked recommends it, the mechanism above is sound, and it is cheap.
🔴 But I want to flag something, because I went looking for the evidence and did not find what I expected. The internet is full of confident numbers on this — “78% less mould than cling film”, “off-odours 3.2× faster”, “controlled trials across 27 cheese varieties”. I chased those. They trace back to a small cluster of content-farm pages that cite nothing, quote no journal, name no laboratory, and repeat each other. I could not find a controlled published comparison of cheese paper against plastic wrap at all.
That does not make the advice wrong — the gas-transmission argument stands on its own and I follow it myself. It makes the statistics fake. This is the same shape as the pickle industry’s 4,000-year timeline and Fáilte Ireland’s medieval breakfast: a plausible claim wearing a number it has not earned. So: use cheese paper because the mechanism is sound, not because of a percentage.
The cheap version that works nearly as well: parchment or waxed paper first, then the wrapped piece loose inside a box or a partly-open bag. The paper controls the surface; the container stops the fridge drying it. Foil is fine for blues, which want a bit more damp.
Where in the fridge: the vegetable drawer. It is the most humid compartment and the most temperature-stable, and it is nowhere near the fan.
🔴 Mould, and the rule almost everybody applies too widely
Most people know “cut the mould off hard cheese.” Here is the USDA’s actual guidance, which is more specific than the folk version in a way that matters.
Hard cheese (not a cheese where mould is part of the process): “Use. Cut off at least 1 inch around and below the mold spot (keep the knife out of the mold itself so it will not cross-contaminate other parts of the cheese). After trimming off the mold, re-cover the cheese in fresh wrap.”
Soft cheese — cottage, cream cheese, Neufchâtel, chèvre: discard.
Cheese made with mould — Roquefort, blue, Gorgonzola, Stilton, Brie, Camembert: discard the soft ones if they carry a mould that is not part of the manufacturing process; on the hard ones such as Gorgonzola and Stilton, take the same inch and handle as hard cheese.
🔴 And the row everybody misses — “Crumbled, shredded, and sliced cheeses (all types): Discard.” The reason given is exactly the mechanism the one-inch rule depends on: “Shredded, sliced, or crumbled cheese can be contaminated by the cutting instrument.”
⭐ That is the correction, and it inverts the situation people are usually in. A whole piece of cheddar with a spot on it is salvageable. A bag of shredded cheddar with a spot on it is not — and the bag is the form most households actually find mould on. The rule you remember applies least often to the cheese you are looking at. The blade that shredded it touched every shred.
Two more details from the same guidance that are worth having:
- “Don’t sniff the moldy item.” Everybody’s instinct is to smell it first; the guidance is that this can cause respiratory trouble.
- “Re-cover the cheese in fresh wrap.” Trimming and then putting the piece back in its old wrapper re-inoculates it from the wrapper. This is the step I used to skip.
⚠ None of this touches the mould you want. A Stilton’s blue veins and a camembert’s white coat are the manufacturing process, and rinds and moulds covers what they are doing.
Freezing
It works, and it costs you something specific. Water in the cheese freezes into crystals that puncture the protein network, so what thaws is crumblier and wetter than what went in. The flavour survives largely intact; the texture does not.
Which makes the decision easy: freeze cheese you intend to cook, never cheese you intend to serve. A frozen-and-thawed cheddar makes a perfectly good sauce and a sad cheeseboard. And since a broken texture melts more readily, freezing a cooking cheese is close to free.
Cutting: one principle, then the shapes
Here is the whole idea. A cheese is not the same all the way through. It ripens from the outside in, so the paste by the rind is riper, softer and stronger than the paste at the centre — dramatically so in a bloomy or washed rind, subtly in a hard cheese, and in a blue the veining is unevenly distributed by geometry.
⭐ So the rule for every shape is the same: cut so that each portion carries the same proportion of rind-edge to centre as every other. Everything below is that one sentence applied to a solid.
- A round — brie, camembert, a small wheel: cut it like a cake, in wedges from the centre out.
- A wedge already cut from a big wheel — Parmesan, Comté, a cheddar block: cut along its length, parallel to the long sides, so each slice has some point and some heel. Do not cut the point off. Slicing straight across the nose gives the first person all the ripest cheese and the last person a slab of rind. This is the one with a name — “cutting the nose off” — and it is the commonest mistake on a board.
- A log — a chèvre bûche: simple discs, and the ends are nobody’s punishment.
- A pyramid or truncated cone: vertically, through the apex, into wedges.
- A blue: wedges from the centre, so the veining is shared out. The heart of a Stilton is not the same food as its outer inch.
Two mechanical notes. Cut cold, eat warm — a cheese slices cleanly at fridge temperature and tastes right an hour later, so do the knife work first and let the plate sit, which is the board’s whole timing problem. And use a different knife for the blue, or everything else on the board becomes faintly blue by the end of the evening.
