Ingredients
Masa
- 6 cups Instant corn masa for tamales
- 6 cups pork broth
- 1 1/2 cup lard
- 5 tsp baking powder
Red chile filling
- 20 New Mexico Chile pods or guajillo New Mexico red bag is my favorite !!!!
- 3 chile ancho
- 12 tomatillos
- 7 garlic cloves
- 1 1/2 tsp whole cumin
- 1 tsp Salt 1 tbsp chicken bouillon
Meat
- 5 lbs pork shoulder
- 1 onion
- 1 head of garlic
- 4 bay leaves
- 2 tsp whole black pepper
- 2 tsp all spice
- 2 tbsp salt 1-2 tbsp chicken bouillon
- 5 whole cloves
- 16 cups water
