Soup, Lentil and Sausage, Crock Pot

Ingredients
- 1 cup uncooked lentils
- 1/2 lb kielbasa, cut into 1 inch pieces
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup carrot, finely chopped
- 1 cup potato, diced
- 2 tablespoons chopped fresh parsley
- 3 (16 ounce) cans beef broth
- 1/2 teaspoon fresh ground black pepper
- 1/8 teaspoon nutmeg
Directions
- Rinse lentils and drain.
- Place all ingredients in crock pot. Omit sausage and substitute Veg broth for vegetarian.
- Cook on low for 6 hours, stirring occasionally.
