Sausage, Pork, Jerk

Ingredients

  • 5-lbs ground pork shoulder
  • 1-cup red wine
  • 3-tbsp dried minced onion
  • 3-tbsp thyme
  • 11/2-tbsp garlic powder
  • 11/2-tbsp cayenne
  • 11/2-tbsp sugar
  • 3-tsp allspice
  • 3-tsp black pepper
  • 1 1/2-tbsp salt
  • 3/4-tsp cinnamon

Directions

  1. Combine all ingredients, mix well & stuff into hog casing.
