Sausage, Chorizo, Pork, Mexican, Jeff's

Ingredients

  • 2 pounds Ground Pork (70/30)
  • 2 teaspoons Ground Cayenne Pepper
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Ground Cloves
  • 1 teaspoon Ground White Pepper
  • 1/2 teaspoon Ground Oregano
  • 1 teaspoon Ground Cumin
  • 2 tablespoons Minced Garlic
  • 2 teaspoons Kosher Salt
  • 1 tablespoon Cider Vinegar
  • 2 teaspoons Ground Ancho Chile Powder
  • 2 teaspoons Ground Chipotle Chile Powder
  • 1 teaspoon Smoked Paprika

Directions

  1. Thoroughly mix seasonings into the pork with your hands (do not touch your eyes after this or you WILL be sorry). Let the flavors “marry” in the refrigerator for 1 or 2 days. Shape into patties or just crumble and brown in a frying pan… Enjoy!
  2. P.S. You can put this into casings if you want to, but it is not necessary as you will be squeezing it out of the casings when you use it anyway.

Notes

I just love chorizo and eggs with a little salsa verde wrapped up in a tortilla. I used to eat this in Mexico all the time. Unfortunately, it is hard (nearly impossible) to find good chorizo in the states so, I came up with my own recipe. This is a bit spicy (because that’s the way I like it) but you can back off a little on the spices if you do not like it quite so spicy.
