Sauerkraut, Basic (2.25% by Weight)

The first thing I ever tried to ferment and the thing I still make most. My first attempt, in a one-gallon crock in the early eighties, did not turn out well — I could not see what was happening and by the time I could, it was over. So I backed down to a half-gallon jar with an airlock in a rubber bung, and that is where I would start anybody. The diagnostic detail is that you add no water at all: the salt pulls the brine out of the cabbage, and that liquid is the brine.

  • 1 head green storage cabbage (about 900 g shredded)
  • Salt at 2.25% of the shredded cabbage weight (20 g per 900 g), canning or pickling salt
  • 1 Tbsp caraway seed (optional)
  • 1 outer cabbage leaf, reserved whole

  2. Cabbage and salt. That is the whole ingredient list, and the salt is a safety control rather than a seasoning.
  3. Weigh: Weigh the empty jar and write the number down — you will use the jar as the scale bowl. Quarter and core the cabbage and slice it about ⅛ inch. A mandoline gives you consistency, which matters more than speed, because unevenly cut cabbage ferments unevenly.
  4. Compute the salt: Weigh the shredded cabbage, subtract the jar, multiply by 0.0225. For 900 g that is 20 g. This one multiplication is the entire arithmetic of fermenting. Never measure salt by volume — a tablespoon of flake salt can be barely half the salt of a tablespoon of fine pickling salt.
  5. Salt and wait: Toss the salt through the cabbage and leave it 15–20 minutes. The salt does much of the extraction on its own, and you will get more brine for less work.
  6. Work it: Massage hard for 5–10 minutes. It resists and then gives all at once — the volume collapses by half and a real puddle appears. That liquid is your brine; do not pour it off.
  7. Pack: Into the jar a handful at a time, pressing each layer down hard. The brine should rise as you compress. Stop about 3 inches below the rim — it will bubble and push brine up, and you want that in the headspace rather than on the floor.
  8. Cap and weight: Fold the reserved leaf over the shreds — it catches the bits that escape a weight — then weight it until the brine covers everything. Anything above the brine is where trouble starts.
  9. Ferment: Fit the airlock. Somewhere cool and dark, 60–70 °F. Bubbles in one to three days, vigorous for several more, then quiet — that is the early gas-producing stage finishing, not a failure.
  10. Taste from a week: Clean fork, take a strand, re-cover, re-weight. Stop when you like it. A week is mild and crunchy; three weeks is proper kraut. Then refrigerate.

Notes

PROVENANCE. My own method, run for forty-odd years, now cross-checked against NCHFP, whose sauerkraut recipe is 5 lb shredded cabbage to 3 Tbsp canning salt. Run that arithmetic and it is about 2¼–2½% by weight, which is where the 2.25% figure comes from — and a good demonstration of why percentage beats tablespoons.

TEMPERATURE IS THE FLAVOR LEVER, and it is the variable most people ignore. Cool and slow wins: at 55–65 °F the early Leuconostoc stage runs much longer before the acid-tolerant species take over, and that early stage makes most of kraut’s aromatic complexity. Warm fermentation is fast, clean and one-dimensional. My basement sits at 58–62 °F most of the year and that is not a small part of why the kraut is good.

SAFETY. NCHFP is blunt: do not cut back on the salt. Salt handicaps the spoilage organisms for the days before the acid takes over. A finished ferment lands near pH 3.4, well under the 4.6 line below which botulism cannot occur — and there are no documented cases of botulism from any fermented vegetable.

IF THE BRINE DOES NOT COVER after an hour or two, top up with cooled 2% brine (about 1½ Tbsp salt per quart), never plain water — that would dilute the salt you just measured.

DON’T THROW OUT THE BRINE. It is a seasoning, a drink, and the starter for your next batch.
