Rumaki, Chorizo

Ingredients

  • 1 package (1 pound) sliced bacon
  • 4 ounces uncooked chorizo (I use my homemade Chorizo)
  • 2 ounces Cream Cheese cut up into cubes
  • 32 pitted dates

Directions

Cut each bacon strip in half

  1. In a large skillet, cook bacon in batches over medium heat until partially cooked but not crisp
  2. ​Remove to paper towels; drain drippings
  3. Crumble chorizo into the same skillet
  4. Cook and stir until fully cooked
  5. Drain then stir in cream cheese
  6. Carefully cut a slit in the center of each date

Fill with cream cheese mixture

  1. Wrap a piece of bacon around each stuffed date and secure with a toothpick

Place on ungreased baking sheets

  1. Bake at 350° for 12-15 minutes or until bacon is crisp.
