Eggs, Pickled

Ingredients

  • 1 gallon jug
  • 30 eggs
  • 1 red bell pepper
  • 2 jalapenos
  • 1 red onion
  • 2 large carrots
  • 4 cloves fresh garlic
  • 2 cups each white and apple cider vinegar
  • 3 cups water
  • 1/2 cup sugar
  • 3 tsp kosher salt
  • 1 tbsp crushed red pepper
  • 2 tsp whole peppercorns
  • 1 heaping tsp pickling spice
  • 2 tsp dill weed
  • 2 tsp mustard seed

Directions

  1. Add vinegar, salt, sugar, water, and all the seasonings to a pot. Bring to a low boil for a few minutes. Allow to cool. Pour over your layered egg and veggie mix.
  2. Refrigerate for 2 weeks and enjoy
