Directions
- This requires no preparation — it is the arrangement of leftover cold cornbread and room-temperature pinto beans.
- Pack pinto beans in a wide-mouth mason jar.
Wrap cold cornbread wedge in wax paper or cloth.
- At lunchtime, open the bean jar. Crumble chunks of cornbread directly into the beans, or alternate bites of cornbread with spoons of beans.
- Use the edge of a cornbread chunk to scoop and sop the thick bean broth.
- Season with hot sauce and top with raw onion slices if desired.
