Cherries, Pickled (Jeff's)

Serves 1 Quart Mason Jar

Ingredients

  • 1 cup apple cider vinegar
  • 3/4 cup water
  • 1/2 cup dark brown sugar
  • 1 tsp whole black peppercorns
  • 4 or 5 Allspice berries
  • 1 small cinnamon stick
  • 1 lb fresh cherries, stemmed and pitted

Directions

  1. Bring first 6 ingredients to a boil in a medium stainless-steel saucepan, stirring to dissolve sugar.

Reduce heat to medium and simmer 5 minutes.

  1. Add cherries to saucepan and simmer until cherries are tender, 3-5 minutes.
  2. Transfer cherries and rosemary to a 1 quart mason jar.

Pour in enough pickling liquid to cover cherries.

  1. Keep in fridge or can using water bath (or steam) method.
