That is the whole difference and it is worth stating plainly: feta drains unpressed under its own weight, which is why it crumbles. Telemea is pressed overnight in cloth and then cut into squares, which knits the curd into something that slices instead. Same milk, same brine, one extra piece of equipment, different cheese.

⭐ And it is the one here that often gets a second treatment after brining — a great deal of Romanian telemea is smoked, which nothing else on this page is.

Ingredients

  • 1 gallon whole milk — sheep traditionally, cow very commonly, buffalo in places
  • 1/2 tsp mesophilic culture — see Cheese Culture, Mesophilic Mother
  • 1/2 tsp calcium chloride solution, if the milk is shop-bought
  • 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water

Coarse salt, for dry-salting the cut squares

  1. Warm the milk to 88 F / 31 C, add the mesophilic culture, and ripen 45 minutes.
  2. Rennet at a flocculation multiplier of 3, and let it set firm.
  3. Cut to 1/2 inch, rest 10 minutes, then stir gently 20 minutes. No cook.
  4. 🔴 Now press, which is the step that separates this from a feta. Drain the curd into cloth, gather it, and press overnight under light weight~5 PSI is plenty.Light. You are knitting the curd, not driving out the moisture that makes it a brined cheese.
  5. Cut the pressed slab into squares of about 3 inches.
  6. Dry-salt the squares and rack them 24 hours, turning.
  7. Into the storage brine, and age it from 30 days.
  8. ⭐ Optional, and traditional: smoke it. Cold-smoke the drained squares for 2 to 4 hours before they go into the brine. ⚠ Cold, under 85 F / 29 C — warm smoke turns the surface greasy and the cheese sweats in the brine afterwards.
  9. What right looks like: it should slice cleanly without crumbling, taste mildly tangy and salty, and — if you smoked it — carry the smoke as a rim rather than all the way through.

Notes

Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 And this is specifically not Telemea de Ibănești, which is a PDO.

🔴 The brine is the aging environment, not storage A brined cheese has no rind, so there is no barrier between the liquid and the paste: whatever is in the brine is in equilibrium with the cheese, permanently. A plain salt brine pulls calcium out of the cheese down the concentration gradient, and the surface goes slippery, then soft, then to mush — in about a week, on a perfectly good cheese. That is not spoilage, it is chemistry. Use the storage formulation in Cheese Brine, Saturated: 7-8% salt, 0.5% calcium chloride, and acidified with a splash of vinegar so the brine sits near the cheese’s own pH rather than well above it.

⭐ Where this sits on the family’s one axis The makes page turns on a single variable: how far down the acid curve the curd is taken. Low pH strips the colloidal calcium phosphate that cross-links the protein, so an acidified brined cheese crumbles and a high-pH one stays elastic and squeaks. Feta goes furthest down. Halloumi barely starts. Everything else in the family sits somewhere between those two, and that placement — not the country on the label — is what decides how it behaves in a pan.

⭐⭐ Two brined white cheeses, two protected names, opposite rules Telemea de Ibănești became the first Romanian cheese to hold a PDO, granted 15 March 2016. Production is confined to the communes of Ibănești, Hodac and Gurghiu in the Gurghiu Valley, Mureș County — and the specification protects a cow’s-milk cheese, made from indigenous local cow breeds under traditional extensive farming.

🔴 Set that beside feta, whose PDO insists on SHEEP (or sheep with up to 30% goat) and refuses cow’s milk outright. ⭐ Two cheeses from the same family, made almost the same way, and in both cases the thing the law actually protects is the ANIMAL — but a different one. It is a good corrective to the idea that a protected name is about a place: both of these are about a herd, and the place is where the herd is.

⚠ On the smoking Smoked telemea is common and traditional, and it is not what the Ibănești PDO is about. Treat it as one of the things Romanian makers do with the cheese rather than as part of a definition.
