Ingredients

  • 1 gallon whole milk (not ultra-pasteurised)
  • 1/8 tsp thermophilic culture
  • 1/4 tsp calcium chloride solution, if the milk is shop-bought
  • 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
  • 1 Tbsp fine salt, dissolved in the stretch water
  • Water at 170-180 F for stretching

  1. Make the curd as for Cheese, Mozzarella (Cultured), but cook it a little further and drain it a little harder — you want a drier curd here than for a fresh ball, because moisture is what makes the fibres knit back together instead of separating.
  2. Mat, ripen, and test with the golf ball at 175 F. Same window: 5.4 down to 5.0.
  3. Salt the stretch water — about 1 Tbsp per quart.
  4. ⭐ Now stretch it in ONE DIRECTION, repeatedly. Work the curd smooth, then pull it out into a long rope. Fold it back on itself and pull again. And again — six to ten times. Each pull lines the protein up a little more. This repetition is the entire difference between string cheese and mozzarella, and it is the step people skip.
  5. Keep it hot enough to move. Dip it back in the hot water whenever it stops flowing. Curd that has cooled tears instead of drawing.
  6. Finish as a rope about an inch thick, then cut it into sticks and drop them into iced water to set.
  7. Test it. A finished stick should peel cleanly along its length and resist being pulled apart across it. If it just breaks, it did not get enough passes — or the curd was too wet.
  8. Keep cold and eat within a week or two.

Notes

Where this recipe came from — and what it isn’t 🔴 UNTESTED.Not Armenian chechil, which is brined much harder, braided, and frequently smoked — a genuinely different product that shares the English name.

The mechanism, stated properly Casein in a stretched curd forms long strands. Drawing the curd orients those strands along the axis of the pull, and the more times you draw and fold, the more consistent the orientation. The result is anisotropic — it has different mechanical properties along and across the grain — which is why it peels. ⭐ This is the same reason a young mozzarella pulls into strings on a pizza and a two-year cheddar does not: proteolysis has been cutting the strands shorter the whole time a cheese ages, and short strands cannot line up into long fibres.

Why it has to be young The fibres survive only as long as the protein network does. A string cheese does not improve with age; it stops working. That is a real constraint of the product rather than a commercial decision.

Variations Smoked, cold only, below 90 F. Braided, which is the eastern-Mediterranean habit and makes the alignment visible.
