Cheese, Stilton-Style
β **UNTESTED as a Stilton-style specifically.** I have **dabbled** in blue β that is my word and it is honest β and it is the family I have explored least in thirty years. I have not said which blue, because I could not tell you. A Stilton-style is the English blue: cow's milk, high fat, **dry-salted over several days**, a natural crusty grey-brown rind that you brush rather than wash, and three months minimum. π΄ **And it carries the strangest legal story in the whole section, which is that the PDO FORBIDS raw milk.** Everywhere else in this collection a protected designation is fighting to *keep* raw milk β Camembert de Normandie requires it, Boerenkaas requires it, Roquefort is *defined* as raw. Ingredients
- 3 gallons whole milk, plus 1 pint heavy cream (not ultra-pasteurised)
- 3/8 tsp mesophilic culture
- 1/16 tsp Penicillium roqueforti β a pinch, and no more
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- 3 Tbsp fine salt, roughly 3% of the wheel weight, applied over several days
- 1 tall straight-sided mould, about 6 inches across
- A sanitised skewer or a blue needle
- Foil, for when the veining is where you want it

Key ingredients
- Warm the milk and cream to 86 F / 30 C. Mesophilic culture and a pinch of P. roqueforti, stirred right through. β Dose the mould lightly. More spores does not give better veining β it gives a cheese that over-blues and turns bitter and soapy.
- Ripen 60-90 minutes, then rennet at a flocculation multiplier of about 4. Softer than a cheddar, firmer than a bloomy rind.
- Cut to 3/4 inch and stir as little as you can bear. No cook. You are not trying to expel whey efficiently; you are trying to end up with curd pieces that will sit against each other rather than fuse.
- Drain the curd in a cloth for an hour, then ladle it into the mould in layers, unpressed. Traditional practice dusts a little extra mould between the layers for emphatic veining.
- Flip often β every hour or two for the first several hours, then a few more times over 24 hours at 65-68 F / 18-20 C. An unpressed wheel slumps if you do not.
- Dry-salt over several days. About 3% of the wheelβs weight, applied to the surfaces in two or three passes rather than all at once, flipping between.
- Rest 1-2 weeks at 50-55 F / 10-13 C, 90-95% RH. Flip daily. Brush the rind with a dry cloth or a little dry salt to keep the surface in order β a Stilton-style gets a natural crusty rind, brushed, not washed.
- Needle at 7 to 14 days β when the wheel is firm enough to hold a channel open rather than closing behind the needle. 30 to 50 holes per face, full depth, worked evenly around. A second needling at about three weeks opens it further if the blue is shy.
- Age 3 to 4 months. When it has as much blue as you want, wrap it in foil β that cuts the oxygen and effectively stops the mould where it is.
Notes
Where this recipe came from β and what it isnβt π΄ UNTESTED as this style. π΄ This is not Stilton, a PDO restricted to Derbyshire, Nottinghamshire and Leicestershire. This is a Stilton-style blue.
π΄ Everything here is inverted on purpose Penicillium roqueforti is aerobic. Add it to the milk and it will sit in the finished wheel doing nothing at all, because a well-made cheese has no oxygen in it.
So a blue is built to give it some, in two stages. A loose, open, badly-knit curd β minimal cutting, gentle stirring, no press or a token one β leaving a body full of tiny voids. And then the needles, weeks later: dozens of channels driven through the wheel, air reaches the interior, the dormant mould wakes up and grows along those channels.
β That is why the veining follows lines rather than being random. Those blue-green streaks are a map of where the needles went. In any other family an open curd is a defect with a name; here it is the specification.
Why blues are dry-salted rather than brined β It is structural, not traditional. A brine adds water to the rind and closes the surface; heavy dry salting draws moisture OUT and leaves a surface that can still breathe. On a high-moisture, deliberately open cheese both of those matter β and heavy salt is also one of your two brakes on a mould that would otherwise run away with the wheel.
π΄ The raw-milk inversion, in full The Stilton PDO prohibits raw milk. That is extraordinary in this collection: six regulators reached six incompatible conclusions about raw milk in overlapping decades, and Stilton sits at the opposite pole from Camembert de Normandie and Boerenkaas. The ban came from a 1989 decision by the trade body after a food-poisoning scare, and β the culprit was never established β the ban outlived the question it was meant to answer.
β Stichelton is the live consequence: a raw-milk Stilton-method cheese made inside the qualifying counties, which cannot use the name. The disqualifier is process, not place. The whole argument is on /cheese/history/the-english-story/.
β And it will get into everything else P. roqueforti produces enormous numbers of spores and they travel. Once blue is aging in a small shared space, expect to find it colonising the rinds of things that were never meant to be blue. The serious answer is a separate space; the practical home answers are to run blue in batches and clean thoroughly afterwards, or to keep the wheels in their own sealed container inside the cave. Worth knowing before you start rather than after β particularly if, like me, you have one cave and one fridge and everything shares.
What goes wrong No blue, or only at the rind β the commonest failure. Diagnose in this order: curd too tightly knit (you pressed it, stirred too hard, or cut too fine) β not needled, or needled too early so the channels closed β too much salt β not enough spores β too cold. Too much blue, bitter or soapy β over-blued; foil earlier next time. The paste went to paste β P. roqueforti is aggressively proteolytic and a wet wheel breaks down faster than you expect.
