⚠ **UNTESTED.** A briefing. The Bulgarian white brined cheese, and it is sold in a lot of shops as *Bulgarian feta*, which it is not. It is **the same axis as [feta](/recipes/cheese-feta/), stopped earlier.** ⭐ Sirene is drained less aggressively and **does not develop as much acid**, so it keeps more moisture and comes out **smoother, creamier and more elastic**, with a milder, less tangy edge. Ingredients

  • 1 gallon whole milk — cow is the common one, sheep or a mix is traditional
  • 1/2 tsp thermophilic culture — see Cheese Culture, Thermophilic Mother
  • 1/2 tsp calcium chloride solution, if the milk is shop-bought
  • 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water

  1. Warm the milk to 90-95 F / 32-35 C and add the thermophilic culture.Not the mesophilic one — this is the exception on a page where everything else is mesophilic. Ripen 45 minutes.
  2. Rennet at a flocculation multiplier of 3, and let it set firm.
  3. Cut to 1/2 to 3/4 inch — COARSER than a feta, and stir only briefly, 10 to 15 minutes.This is the whole difference and it is a decision about restraint: every extra minute of stirring is moisture you are taking out, and moisture is what makes sirene sirene.
  4. Drain in a cloth or a mould, pressed only lightly, for 4 to 6 hours.
  5. 🔴 Stop the acid EARLIER than you would for a feta. Aim to be in the brine while the curd still has some give to it. If it has gone firm and squeaky-crumbly you have made a feta — a perfectly good one, but not this.
  6. Cut into blocks, dry-salt, and rack 12 hours — half the time a feta gets.
  7. Into the storage brine, and age it 30 to 60 days.
  8. What right looks like: sliceable and slightly springy rather than crumbly, milky, mildly salty, and noticeably wetter than a feta of the same age.

Notes

Where this recipe came from — and what it is not 🔴 UNTESTED.Sirene is not protected the way feta is, so it varies a great deal from maker to maker, and the description above is the common shape rather than a specification. There is no court case to point at here, which is itself part of the picture.

🔴 The brine is the aging environment, not storage A brined cheese has no rind, so there is no barrier between the liquid and the paste: whatever is in the brine is in equilibrium with the cheese, permanently. A plain salt brine pulls calcium out of the cheese down the concentration gradient, and the surface goes slippery, then soft, then to mush — in about a week, on a perfectly good cheese. That is not spoilage, it is chemistry. Use the storage formulation in Cheese Brine, Saturated: 7-8% salt, 0.5% calcium chloride, and acidified with a splash of vinegar so the brine sits near the cheese’s own pH rather than well above it.

⭐ Where this sits on the family’s one axis The makes page turns on a single variable: how far down the acid curve the curd is taken. Low pH strips the colloidal calcium phosphate that cross-links the protein, so an acidified brined cheese crumbles and a high-pH one stays elastic and squeaks. Feta goes furthest down. Halloumi barely starts. Everything else in the family sits somewhere between those two, and that placement — not the country on the label — is what decides how it behaves in a pan.

⭐ The organism is the interesting part Lactobacillus delbrueckii subsp. bulgaricus was isolated from Bulgarian fermented milk and takes its name from the country. It is one half of the standard yogurt pair, the other being Streptococcus thermophilus — which is why the thermophilic mother recipe notes that plain live yogurt genuinely is a thermophilic starter. ⭐ Here that is not a shortcut, it is close to the real thing, and it is the one place on this page where reaching for the yogurt pot is defensible rather than merely convenient.

⚠ On the name “Bulgarian feta” is a shop label, not a cheese. Sirene is simply the Bulgarian word for white brined cheese, and this collection writes it that way — the same courtesy it extends to every other cheese whose name got borrowed by somebody else’s marketing.
