Sheep milk carries substantially more fat and protein than cow’s, so expect a higher yield and a denser, whiter paste, and expect it to behave differently at every step rather than just to taste different.

Ingredients

  • 3 gallons sheep’s milk if you can get it, otherwise whole cow’s milk (not ultra-pasteurised)
  • 3/8 tsp mesophilic culture
  • 1/16 tsp Penicillium roqueforti
  • 3/4 tsp calcium chloride solution, if the milk is shop-bought
  • 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
  • 4 Tbsp fine salt — this family is salted hard
  • 2 straight-sided moulds, about 5 inches across
  • A sanitised skewer or a blue needle
  • Foil, for when the veining is where you want it

Salt

  1. Warm the milk to 86 F / 30 C.Sheep milk sets faster and firmer than cow’s for the same rennet dose — watch the flocculation rather than the clock, and expect to cut sooner than a cow’s-milk recipe would tell you.

Mesophilic culture and a pinch of P. roqueforti, ripen 60-90 minutes.

Rennet at a flocculation multiplier of about 4, cut to 3/4 inch, stir minimally, no cook.

  1. Drain and ladle into the moulds in layers, unpressed, flipping often over 24 hours at 65 F.
  2. 🔴 Salt hard — about 4% of the wheel weight — over three or four days. This family is the most heavily salted of the blues, and the salt is doing two jobs: controlling a very vigorous mould in a very rich milk, and providing the sharp saline edge the cheese is known for. Under-salt this one and it will run away from you.
  3. Rest 1-2 weeks at 48-52 F / 9-11 Ccooler than the other blues, which is what the caves give and what slows the paste down while the veining develops.
  4. Needle at 7-14 days, 30-50 holes per face, full depth.
  5. Age about 5 months, foiling when the blue is where you want it. Expect it to be crumbly, moist, intensely salty and sharp — this is not a mild cheese and should not be aimed at being one.

Notes

Where this recipe came from — and what it isn’t 🔴 UNTESTED. 🔴 This is not Roquefort, and cannot be — the name is legally tied to ripening in the caves at Roquefort-sur-Soulzon, so it is not a matter of method or milk. This is a Roquefort-style blue.

🔴 Everything here is inverted on purpose Penicillium roqueforti is aerobic. Add it to the milk and it will sit in the finished wheel doing nothing at all, because a well-made cheese has no oxygen in it.

So a blue is built to give it some, in two stages. A loose, open, badly-knit curd — minimal cutting, gentle stirring, no press or a token one — leaving a body full of tiny voids. And then the needles, weeks later: dozens of channels driven through the wheel, air reaches the interior, the dormant mould wakes up and grows along those channels.

That is why the veining follows lines rather than being random. Those blue-green streaks are a map of where the needles went. In any other family an open curd is a defect with a name; here it is the specification.

Why blues are dry-salted rather than brined ⭐ It is structural, not traditional. A brine adds water to the rind and closes the surface; heavy dry salting draws moisture OUT and leaves a surface that can still breathe. On a high-moisture, deliberately open cheese both of those matter — and heavy salt is also one of your two brakes on a mould that would otherwise run away with the wheel.

⭐⭐ Protecting a basement Most protected designations cover an area of production. Roquefort’s covers where the cheese is RIPENED. Milk may come from a broad zone across the Aveyron and beyond; the maturing must happen in the caves. ⭐ The oldest protection in the story is therefore a protection of a place to keep things, granted by a charter of 1411, and it is still the operative idea six hundred years later.

The fleurines The Combalou plateau collapsed in prehistory and the rubble left natural vertical fissures through the mountain. Air moves through them continuously, holding the caves cool and humid without machinery. ⭐ That is the actual technology being protected — not a recipe, and not a village, but a ventilation system made by a landslide.

Sheep’s milk is not a garnish on this recipe Sheep milk has markedly more fat and protein than cow’s. Yield goes up, the paste is denser and whiter, and the set behaves differently. If you substitute cow’s milk you will make a perfectly good blue; you will not make this one, and the recipe should say so rather than pretend the milk is interchangeable.

⚠ And it will get into everything else P. roqueforti produces enormous numbers of spores and they travel. Once blue is aging in a small shared space, expect to find it colonising the rinds of things that were never meant to be blue. The serious answer is a separate space; the practical home answers are to run blue in batches and clean thoroughly afterwards, or to keep the wheels in their own sealed container inside the cave. Worth knowing before you start rather than after — particularly if, like me, you have one cave and one fridge and everything shares.
