Cheese, Provolone

⚠ **UNTESTED.** A briefing. Provolone is the pasta filata family's answer to the question *what if we aged it?* — the same stretched curd as mozzarella, brined, hung on a cord, and left for months. It is the only member of this family that goes anywhere near a cave, and it eats nothing like the others. 🔴 **The bite is not the age. It is an enzyme, added on purpose.** *Provolone piccante* is traditionally made with **kid or lamb rennet paste**, which carries **lipase** — an enzyme that takes milk fat apart into free fatty acids. Those acids are the sharp, peppery, faintly goaty note that people call "aged provolone." The mild *dolce* version is the same cheese made with ordinary calf rennet and less time. So the two provolones on the deli counter are not young and old. **They are two different enzyme decisions**, and you make the choice on day one. The diagnostic detail: **the shape comes from hanging.** Pear, salami, cone and gourd shapes are all consequences of a cheese tied with a cord and left to hang while it dries.

Provolone piccante is traditionally made with kid or lamb rennet paste, which carries lipase — an enzyme that takes milk fat apart into free fatty acids. Ingredients

  • 1 gallon whole milk (not ultra-pasteurised)
  • 1/8 tsp thermophilic culture
  • 1/4 tsp calcium chloride solution, if the milk is shop-bought
  • 1/8 tsp lipase powder (kid or lamb) for piccante — OMIT for dolce
  • 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
  • Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
  • Cord or heavy twine for hanging

  1. Decide dolce or piccante before you start.Lipase goes in with the culture and cannot be added later. Start at 1/8 tsp per gallon or less — a little reads as bite, too much reads as rancid, and there is no way back. If in doubt, use less.
  2. Ripen at 90-95 F / 32-35 C for 45-60 minutes, thermophilic culture, lipase if you are using it.
  3. Rennet, floc multiplier 3. Cut to 1/2 inch. Raise to 105-108 F over 30 minutes, stirring gently. Hold until the curd is firm and springy. Drain and let it mat warm.
  4. Ripen the slab to the stretch window and test with a golf ball, exactly as for Cheese, Mozzarella (Cultured). Same window, same test.
  5. Stretch, and shape it tight. Work the curd smooth in 170-180 F water, then form a pear or sausage shape with no folds or seams trapped inside.This matters far more here than for a fresh cheese: a seam or an air pocket in something that will hang for six months is where mould gets in and where the paste cracks.
  6. Brine. Saturated, calcium-adjusted, at cave temperature — about 6 to 8 hours per pound, flipping halfway.
  7. Tie it and hang it. A cord around the neck, hung somewhere cool with good airflow, until the surface is dry to the touch — 2 to 5 days.
  8. Age at 50-55 F / 10-13 C, 80-85% RH. Dolce: 2 to 3 months. Piccante: 4 months to a year. Wipe any surface mould with brine weekly. Many makers wax or coat it after the first month; a natural rind is the traditional route and needs the weekly attention.
  9. Smoke it, if you want — and cold only. Smoked provolone is traditional and the ceiling is 90 F / 32 C, above which the surface sweats fat.

Notes

Where this recipe came from — and what it isn’t 🔴 UNTESTED.This is not Provolone Valpadana or Provolone del Monaco, both of which are PDO cheeses tied to defined regions and methods. Plain provolone is a generic name and you may use it; those two are not yours to use.

What lipase actually does, and why it is not cheating Lipolysis breaks triglycerides into free fatty acids, and the short-chain ones are intensely flavoured. Traditional southern Italian practice used rennet paste — the whole dried stomach of a kid or lamb, which carries both the coagulating enzyme and a pregastric lipase together. Buying the lipase separately is the same chemistry with the two jobs unbundled. ⭐ It is also the same mechanism as blue cheese’s peppery sharpness, run much less far.

Where provolone came from Southern Italy — Campania and Basilicata — as a keeping version of the fresh stretched cheeses. It moved north to the Po valley in the late 19th and early 20th century, which is why the PDO for Valpadana covers northern provinces for a cheese with a southern name.

Variations Caciocavallo is essentially the same idea, tied in pairs and hung over a pole — see Cheese, Kashkaval for where that word travelled. Smoked provolone is a cold-smoke job. Provolone piccante aged past a year starts developing crystals, like a grating cheese.
