Cheese, Parmesan-Style
⭐ **I have made this one.** It is the cheese I am quietest and most pleased about, and I will leave it at that — a single successful wheel is not the same as knowing a family. ⚠ **But the numbers below are the STANDARD ones, not a transcript of mine.** I never recorded the milk, the exact times or how long I actually aged it, and I am not going to reconstruct them now and present the reconstruction as experience. This is the base make for the whole extra-hard family: rice-grain curd, a hot cook, a long press, weeks in brine, and then a year or more of turning and brushing. ⭐ **The crystals are the receipt, and the law measures them.** Those crunchy white specks in an aged wheel are **tyrosine**, precipitated out because there is not enough water left to hold it in solution. The Parmigiano-Reggiano specification sets a floor of **more than 15% of total protein as free amino acids** — the cheese has to prove, analytically, that it really spent the time.

- 3 gallons whole milk (not ultra-pasteurised) — see the directions about skimming
- 3/8 tsp thermophilic culture — NOT mesophilic
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
- Olive oil, for rubbing the rind from the second month

Key ingredients
- ⭐ Skim, and understand why. Traditionally this is part-skim milk, and not out of thrift. Let the evening milk stand overnight in a wide vessel and take the risen cream off in the morning, then mix it with fresh whole morning milk. Less fat means a firmer, drier body that grates instead of smearing — and the cream you removed becomes butter, which is the sensible use of a dairy’s whole output rather than a sacrifice.
- Warm to 90-94 F / 32-34 C and add the thermophilic culture. Ripen 45-60 minutes.
- Rennet at a flocculation multiplier of 2 to 2.5 — the firmest set in the section, because it has to survive being cut finer than anything else you will cut.
- 🔴 Cut to RICE GRAIN, 1/8 inch or finer. This is the single most important physical step on the page. The smaller the particle, the more surface it has to lose whey from, and there is no other route to this family’s moisture. A curd harp or a whisk, and patience.
- Fore-work 10 minutes at the set temperature before any heat, so the grains firm on the outside and do not shatter into fines during the cook.
- Cook to 125-132 F / 52-56 C over 30-40 minutes, stirring throughout. Then hold, still stirring, another 30-60 minutes until the grains are firm, dry and squeak against each other. A squeezed handful should hold together and then break cleanly when rubbed.
- Settle and gather. Let the curd sink into a single mass under the whey, then lift it out in a cloth in one piece.
- ⚠ Press moderately, and for a long time — NOT hard. Counter-intuitively this family is pressed less hard than an alpine wheel: a traditional grana is pressed lightly and the mass of the wheel plus many hours does the knitting. ~5 PSI for 1 hour, flip and redress; ~10 PSI for 6 hours, flip and redress; ~15 PSI for 12-24 hours.
- Brine at length. Saturated, calcium-adjusted brine. The real thing sits about three weeks; at home, 24 hours per pound, flipping daily, is a reasonable scaling.
- Dry, then age long and DRY. 50-55 F / 10-13 C at 80-85% RH — lower humidity than anything else in this section. Turn and brush weekly. From the second month many makers rub the rind with olive oil, which slows moisture loss and discourages mould.
- Age 10 months minimum. Better at 18. A different cheese entirely at 24.
Notes
Where this recipe came from — and what it is not ⭐ I have made a Parmesan-style wheel. ⚠ The numbers here are the standard ones, because I did not keep the notes — which is exactly the failure the makes page argues against, and I am not going to pretend otherwise on the recipe that proves the point.
🔴 This is not Parmigiano-Reggiano, and the name is worth getting right. In the EU, Parmigiano-Reggiano is a PDO and “Parmesan” is legally the same thing. In the United States “parmesan” is a generic name with its own federal standard of identity, so an American cheese can be sold as parmesan and cannot be sold as Parmigiano-Reggiano. Same word, two legal universes — and this collection writes Parmesan-style for what you make at home.
🔴 Thermophilic, not mesophilic — and the recipe will not warn you Every cheese on this page cooks the curd well past the temperature at which a mesophilic culture dies. Put the wrong one in and you kill your own starter partway through the cook; acidification simply stops, and nothing visible happens at the time. Use Cheese Culture, Thermophilic Mother or a direct-set thermophilic packet.
⚠ The size problem, stated honestly A wheel of Parmigiano-Reggiano takes about 550 litres of milk — a 1,100-litre copper vat makes two. Three gallons is about 11 litres, so a home wheel works at roughly a fiftieth of the scale this family assumes. That is a real cheese and it is not a small anything. It will dry faster, ripen less evenly and never develop the interior a 30 kg wheel protects.
⭐ What the specification actually forbids, which is more interesting than what it requires Read the Parmigiano-Reggiano product specification and the striking thing is the list of things you may not do to the milk. It must be raw and it “shall not undergo any heat treatment or physical or mechanical treatments such as centrifugation, bactofugation or microfiltration, and no additives may be used.” Coagulation is “obtained exclusively by the use of calf rennet.” Maturation is “at least 12 months.” A wheel weighs 30 kg minimum and carries 32% fat on dry matter minimum. ⭐ Every industrial method of cleaning spores out of milk is banned by name — which is what forces the problem back onto the farm, and is the whole subject of Cheese, Grana-Style.
