Ingredients
- 1 gallon whole milk — sheep or goat traditionally, cow works
- 1/2 tsp calcium chloride solution, if the milk is shop-bought
- 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- A pinch of mesophilic culture, OPTIONAL and easily overdone — see the directions
- Coarse salt, for salting the hot blocks
Dried or fresh mint leaves, one per block
- Storage brine — see Cheese Brine, Saturated

Key ingredients
- 🔴 Work fast, and use little or no culture. Warm the milk to 90 F / 32 C. If you use any culture at all, give it 15 minutes and no more. ⚠ Acid is the enemy here — every point of pH you lose costs you calcium cross-links, and the cheese will melt.
- Rennet at a flocculation multiplier of 3, and let it set firm.
- Cut to 1/2 inch, then stir 20 minutes at the set temperature.
- Drain, RESERVING ALL THE WHEY, and press the curd lightly for about an hour — just enough to knit it into a slab you can cut into blocks.
- Cut into blocks about 3 inches square and an inch thick. ⚠ Thinner than feels right. Thick blocks do not cook through and never float.
- 🔴 The step that makes it halloumi: bring the reserved whey to 190 F / 88 C and slip the blocks in. They will sink. Hold them there 30 to 45 minutes, until they float — do not guess the time, wait for the float.
- Lift them out and salt them while they are still hot, which is when the surface will take it.
- Fold a mint leaf into each block as it cools. ⭐ Traditional, and the mint was an antimicrobial as much as a flavour before it was either.
- Brine, and eat it young. Good the same day, better after a week. Fry or grill it dry in a hot pan — it should brown in patches and squeak against your teeth.
- ⭐ Keep the whey. Almost no culture has touched it, so it is the sweetest whey you will ever have — in Cyprus it becomes anari. See the second-run cheeses.

Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 And this is not Halloumi, which since 2021 is a PDO — see below, because it is the strangest protected name in this entire collection.
🔴 The brine is the aging environment, not storage A brined cheese has no rind, so there is no barrier between the liquid and the paste: whatever is in the brine is in equilibrium with the cheese, permanently. A plain salt brine pulls calcium out of the cheese down the concentration gradient, and the surface goes slippery, then soft, then to mush — in about a week, on a perfectly good cheese. That is not spoilage, it is chemistry. Use the storage formulation in Cheese Brine, Saturated: 7-8% salt, 0.5% calcium chloride, and acidified with a splash of vinegar so the brine sits near the cheese’s own pH rather than well above it.
⭐ Where this sits on the family’s one axis The makes page turns on a single variable: how far down the acid curve the curd is taken. Low pH strips the colloidal calcium phosphate that cross-links the protein, so an acidified brined cheese crumbles and a high-pH one stays elastic and squeaks. Feta goes furthest down. Halloumi barely starts. Everything else in the family sits somewhere between those two, and that placement — not the country on the label — is what decides how it behaves in a pan.
🔴🔴 A protected name that describes a cheese which does not exist yet The European Commission registered Halloumi as a PDO in April 2021, by Implementing Regulation (EU) 2021/591. The specification requires that the cheese be more than 50% sheep’s and goat’s milk. ⚠ Cyprus does not currently produce anywhere near enough sheep and goat milk to make its halloumi that way, and reportedly around 70% of the island’s sheep and goats are not of native breeds, which the file also speaks to.
⭐ So the specification is not a description. It is a schedule. The proportion is meant to rise over a transition period until it clears 51%. The original transition ran out in 2024 and was extended by five years, to July 2029. In the meantime the legal definition of halloumi is a number that moves with the season, because goats do not give milk evenly: reported interim quotas ran at 15% through the low-yield months of September 2024 to January 2025, rising to 30% from February to August 2025.
⚠ A challenge to the registration was dismissed by the General Court of the EU (Papouis Dairies and Others v Commission, T-361/21). And the industry continues to argue that 51% by 2029 is not reachable — an argument reported to have been sharpened by livestock losses from foot-and-mouth disease.
🔴 Every other protected name in this collection protects something that exists — a cave, a practice, a breed, a branding iron, a trade secret, a word. This one mandates something that does not, and then moves the deadline. Whether that is agricultural policy wearing a cheese label is a fair question, and it is not mine to settle.
