Cheese, Camembert-Style
⚠ **UNTESTED.** I have **dabbled** in blue and a couple of other mould-ripened cheeses, and this is the family I have explored least in thirty years. Whether one of those couple was a camembert I genuinely cannot tell you, so I am not going to claim it. A briefing. This is the reference make for the whole bloomy-rind family, and almost every decision in it follows from one structural fact: ***Penicillium candidum* lives on the surface and works inward.** It cannot get to the middle of a wheel, so the ripening front travels from the rind toward the centre, week by week. 🔴 **Which fixes the format, and it is geometry rather than tradition.** A camembert-style wheel is about **4 inches across and an inch to an inch and a half thick**. Make it twice as thick and the front never reaches the middle: you get a runny ring around a chalky core, permanently. That is not under-ripening you can wait out. ⭐ **And the cheese never stops.** *P. candidum* does not halt when the wheel is perfect — it keeps going, and where it goes is ammonia. **A bloomy rind is never "done"; it is only ever passing through the condition you wanted**, and your job is to interrupt it. Ingredients
- 1 gallon whole milk (not ultra-pasteurised)
- 1/8 tsp mesophilic culture
- 1/16 tsp Penicillium candidum
- A pinch of Geotrichum candidum, if you have it (gives a more wrinkled rind)
- 1/4 tsp calcium chloride solution, if the milk is shop-bought
- 1/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- 2 tsp fine salt, about 2% of the drained wheel weight
- Two-ply cheese paper for wrapping

Key ingredients
- Warm the milk to 86-90 F / 30-32 C, then add everything at once. Mesophilic culture, P. candidum, and the Geotrichum if you have it — into the milk, not sprayed on later. Surface-spraying works and is less even. Calcium chloride if the milk is shop-bought.
- Ripen 60 to 90 minutes, then add the rennet at a low dose and let it set slowly.
- Aim for a flocculation multiplier of 5 to 6. That is a long, gentle coagulation building a fragile gel that holds a lot of water — which is exactly what you want and the opposite of a cheddar. ⚠ If your recipe gives a clock time it will be somewhere near 90 minutes, but the multiplier is the honest instruction because it measures your milk today.
- Barely cut it. 3/4-inch to 1-inch cubes, or in the French manner do not cut at all and just ladle it in slices. No cooking. No stirring. Rest 10 minutes.
- Ladle into straight-sided open-ended moulds on a draining mat. Fill to the brim, then fill again as it sinks — a gallon fills far fewer moulds than you expect.
- 🔴 Flip, and keep flipping. Every 30 minutes for the first two or three hours, then a few more times over 12 to 24 hours at 68-72 F / 20-22 C. Skip this and you get a fat bottom, a thin top, and a rind that only works on one face. There is no press; the weight of the curd is the press.
- Dry-salt both faces and the edge, about 2% of the wheel’s weight. Salt is your throttle on how fast the mould grows: under-salt and it goes riotous, over-salt and it never blooms.
- ⚠ Now dry the surface — and this is the step people skip. Leave it at room temperature until the surface is dry to the touch, a few hours to overnight, before it goes anywhere humid. Skipping it is the direct cause of rind slip.
- Ripen at 50-55 F / 10-13 C, 90-95% RH, flipping daily. White fuzz appears at day 5 to 10 and covers the wheel by day 10 to 14.
- ⭐ Wrap it, and that is the brake. Once the coat is full, wrap in two-ply cheese paper and move to 39-45 F / 4-7 C. The paper breathes but holds moisture at the rind, and the cold drops the mould’s metabolism. An unwrapped bloomy in a humid cave keeps ripening at full speed and will go to ammonia while you admire it.
- Eat it between four and six weeks from make day. Press the middle with a thumb; when the centre gives, it is there.
Notes
Where this recipe came from — and what it isn’t 🔴 UNTESTED. Standard home method. 🔴 This is not Camembert de Normandie, which is a PDO cheese made from raw milk in a defined area — what you make at home is a camembert-style cheese, and this collection will always write it that way.
🔴 Lactic-set versus rennet-set — the axis nobody explains Every book sorts this family by shape and by rind. The distinction that actually predicts how a cheese eats is how it was coagulated, and there are two answers.
Rennet-set (camembert, brie): a normal dose of rennet, a set in an hour or two, a curd that is cut and handled. Ripened, the paste goes fully molten and runs.
Lactic-set (Chaource, Saint-Marcellin, most fresh goat cheeses): a tiny rennet dose and a very long, mostly acid coagulation — twelve to twenty-four hours — drained by gravity without cutting. Ripened, the outer paste softens but the centre keeps a fragile, chalky, mousse-like core that never becomes liquid.
⭐ So a chalky centre in a Chaource is the cheese working correctly, and a chalky centre in a camembert means it is not ready. Same words, opposite verdicts — and it is the single most useful thing to know before buying or making one.
⚠ The Camembert “peace deal” you have read about is not in force In 2018 it was very widely reported that the Normandy producers had agreed a compromise allowing pasteurised milk into the PDO. That accord was not adopted, and the specification still requires raw milk. The story is repeated as settled fact in a great many places and it is wrong — the cheese section covers the whole fight at /cheese/history/raw-milk-wars/.
What the mould is actually doing P. candidum consumes lactic acid at the surface and produces ammonia, so the surface pH rises — from about 4.7 at draining to well over 6 — while the centre stays acid. Calcium migrates outward down that gradient, stripping the interior of the cross-links holding it rigid, and the mould’s proteases dismantle the casein under the rind. That is the ripening ring you see on a cut wheel, and it moves inward at a rate you can almost diarise.
⭐ The box is not packaging The thin poplar box was devised in the 1890s to let camembert travel, and it does real work: the wood buffers humidity and lets the cheese breathe where a sealed wrapper would suffocate it. A camembert-style cheese kept in cling film goes ammoniated fast. If you have a box, reuse it.
What goes wrong Rind slip — the coat separates and slides: surface too wet going in, or humidity too high. No bloom, or patchy: too cold, too dry, too salty, or dead culture. Blue volunteers: if you have ever made blue in the same space, P. roqueforti spores are in it and are more vigorous than P. candidum — rub them off early with a dry cloth, or run the two families in separate boxes. Chalky core that never softens: wheel too thick, eaten too early, or the curd over-acidified before moulding. Ammonia through the paste: over-ripe; not fixable, though not unsafe. Bitterness: excess rennet first, then the culture.
