Ingredients
- 2 gallons whole milk (not ultra-pasteurised)
- 1 pint heavy cream
- 1/4 tsp mesophilic culture
- 1/32 tsp Penicillium roqueforti β a very light hand
- 1/16 tsp Penicillium candidum
- 1/2 tsp calcium chloride solution, if the milk is shop-bought
- 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- 2 tsp fine salt
- 2 straight-sided moulds, about 5 inches across
- A sanitised skewer, and two-ply cheese paper

Key ingredients
- Blend the cream into the milk cold and warm gently to 86 F / 30 C. β Do not take cream past about 165 F at any stage β it denatures the whey proteins onto the casein and gives a grainy set nothing later will fix.
- Add the mesophilic culture, BOTH moulds, and ripen 60-90 minutes. π΄ Dose the P. roqueforti at about half what you would use in a Stilton-style. You want veining as a feature, not a takeover β the whole point of this cheese is that the blue is restrained enough for the bloomy rind and the cream to be tasted alongside it.
- Rennet at a flocculation multiplier of 5, cut barely β 1-inch cubes or ladled uncut β and do not cook or stir. This is closer to a bloomy-rind make than to a Stilton.
- Ladle into moulds, flip on the bloomy schedule β every 30 minutes for the first hours, then over 12-24 hours at 68-72 F.
- Dry-salt at about 2% β lightly, then dry the surface until dry to the touch.
- Ripen at 50-55 F / 10-13 C, 90-95% RH. The white coat arrives at day 5 to 10, as it would on a camembert.
- β Needle lightly, and late β about day 10 to 14, and only 10 to 15 holes per face. This is the trick. Too many channels and the blue overwhelms the bloomy rind and the cream, and you have made a mediocre blue instead of a good hybrid.
Wrap in two-ply paper once the white coat is full, and move to 39-45 F.
- Eat at 4 to 6 weeks, while the paste is soft and the veining is still a minority partner.

Where this recipe came from β and what it isnβt π΄ UNTESTED. π΄ βCambozolaβ is a registered trademark, not a generic name and not a designation of origin. This recipe is a Cambozola-style cheese β a blue-and-bloomy hybrid β and the word itself belongs to somebody.
β Trademark versus PDO, since this is the only example here The rest of this collectionβs protected names are designations of origin: tied to a place, open to anyone inside it who follows the method, and outliving any particular producer. A trademark is corporate property: it travels with the owner, the owner may change the recipe or discontinue it, and no one else may use the word under any circumstances. β Both protect a name. One protects a practice; the other protects a business. Worth holding side by side, because they are usually discussed as though they were the same instinct.
π΄ Everything here is inverted on purpose Penicillium roqueforti is aerobic. Add it to the milk and it will sit in the finished wheel doing nothing at all, because a well-made cheese has no oxygen in it.
So a blue is built to give it some, in two stages. A loose, open, badly-knit curd β minimal cutting, gentle stirring, no press or a token one β leaving a body full of tiny voids. And then the needles, weeks later: dozens of channels driven through the wheel, air reaches the interior, the dormant mould wakes up and grows along those channels.
β That is why the veining follows lines rather than being random. Those blue-green streaks are a map of where the needles went. In any other family an open curd is a defect with a name; here it is the specification.
β Two moulds in one cave is a real complication You are running P. candidum on the surface and P. roqueforti inside, and P. roqueforti is the more vigorous of the two. In a shared cave it will try to colonise your bloomy rinds β including this cheeseβs own. Rub blue growth off the surface early with a dry cloth, and expect this make to be the one that seeds your cave.
β And it will get into everything else P. roqueforti produces enormous numbers of spores and they travel. Once blue is aging in a small shared space, expect to find it colonising the rinds of things that were never meant to be blue. The serious answer is a separate space; the practical home answers are to run blue in batches and clean thoroughly afterwards, or to keep the wheels in their own sealed container inside the cave. Worth knowing before you start rather than after β particularly if, like me, you have one cave and one fridge and everything shares.
What goes wrong The blue took over β dosed too heavily or needled too much; halve both next time. No blue at all β the curd is closed, which is easy to do when you are handling it like a bloomy rind. Grainy paste β the cream was overheated. Ammonia β over-ripe, as with any bloomy rind; this one has a shorter fuse than a camembert because of the added fat.
