Ingredients
- 1 chub of bologna
Meat Church The Gospel All Purpose BBQ Seasoning
- 1 tsp, yellow mustard
- Sandwiches
- Slices of white bread
- Mayo
Directions
- Prep the Chub
- Score about 1/4 inch deep lengthwise about 1 inch apart end to end.
- Score around the Chub 4 or 5 times evenly spaced
- These scores help take in the spices and smoke
- Slather entire Chub with mustard
Add BBQ seasoning
- Smoke the chub
- Place the chub in your smoker. Smoke for at least 2 hours around 225 to 275 degrees F. Some folks like to go longer. Time is not super important on this cook as you are simply re-heating a cooked piece of meat and trying to impart some smoke flavor into it.
- Remove the chub from the smoker. Allow to cool for 10 minutes.
- Slice thick. Sear in a piping hot cast iron skillet for 45 seconds per side.
- Create sandwiches with white bread and mayo. You may like yours with lettuce and tomato, but I like it plain myself. Enjoy!
