Beef, Braised, Osso Bucco (Milanese - Milan Italy), Instant Pot

Ingredients

  • 3 1 to 1 1/2-inch-thick pieces osso buco (veal shanks) (about 2 pounds)
  • 2 tbsp olive oil
  • 1 garlic clove (chopped)
  • 1 carrot (chopped)
  • 1 medium yellow onion (chopped)
  • 1 celery stalk (chopped)
  • 4 cups beef broth
  • 1 cup red wine
  • (1) 6 ounce can tomato paste

Directions

  1. First, coat the bottom of the Instant Pot pan with olive oil. Place osso bucco into the pressure cooker.
  2. Sauté each side of the meat until lightly browned (about 5-7 minutes per side). Remove meat from the pressure cooker and set aside on a plate.
  3. Now, place garlic and veggies into the Instant Pot, and sauté for a few minutes until tender.
  4. Next, add back in the osso bucco and pour in the remaining ingredients (broth, red wine, tomato paste).
  5. Secure the Instant Pot lid into place, and cook on HP for 40 minutes (for even more tender meat you can cook up to 45-50 minutes). Quick release the steam.
  6. Serve osso bucco with the tender veggies and red wine sauce over top.
  7. You can also serve this most delicious meal over linguine, polenta, or mashed potatoes, too!
