Alabama white BBQ sauce is a mayonnaise-based, tangy, and peppery regional condiment created by Big Bob Gibson in 1920s Northern Alabama, traditionally used to baste or dip smoked chicken. It is made by blending mayo, apple cider vinegar, horseradish, and spices, offering a creamy, zesty flavor that keeps smoked meats moist. I fell in love with this sauce in the early 90s and love it on pulled pork and smoked chicken.

Ingredients
- 1 cup mayonnaise
¼ cup apple cider vinegar
- 1 tablespoon brown mustard (I use a spicy brown mustard)
- 1 tablespoon brown sugar
- 2 teaspoons prepared horseradish (I use a hot horseradish paste)
- 1 teaspoon lemon juice
- ½ teaspoon Worcestershire sauce
- ½ teaspoon hot sauce (I use Tabasco Chipotle)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
- Salt and pepper to taste I use ½ teaspoon each
Directions
- Whisk all of the ingredients together in a small bowl until smooth.
- Use right away, or transfer to a sealable jar and refrigerate a few hours to let the flavors develop and meld.
- Will last a week in the refrigerator or longer.
Notes
Spice Factor:
This is typically (traditionally) a mild sauce, though you can spice it up if you’d like with hotter powders and/or chili flakes.
