BBQ Sauce, Mustard, Carolina-Style, Jeff's
This sauce is one of my variations on the classic mustard barbecue sauce. Rather than being thick and sweet like other Southern sauces, it's vinegar-based. The combination of savory mustard, sweet sugar, and a touch of liquid smoke make it a great general pork sauce.

Ingredients
- 1 cup yellow mustard
- 3/4 cup cider vinegar
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1/4 cup water
- 2 tablespoons mild chili powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon freshly ground white pepper
- 1 teaspoon soy sauce
- 2 tablespoons unsalted butter
- 1 tablespoon liquid smoke, hickory flavor
Optional (But HIGHLY recommended)
- 1/2 teaspoon cayenne pepper

- 2 teaspoons Worcestershire Sauce
Directions
- Combine all the ingredients, except the soy sauce, butter, and liquid smoke, in a medium saucepan. Add the cayenne, if using. Simmer on low for 20 minutes, making sure to stir occasionally.
- Add the soy sauce, butter, and liquid smoke and simmer for 10 more minutes. Remove the sauce from heat and allow the mixture to cool for 10 to 15 minutes before using it in your favorite barbecue recipe.
- Enjoy.

This is only slightly different than my [recipe:BBQ Sauce, Mustard, Southern South Carolina, Jeff’s] recipe and alas, many times when I make this, I will throw in some Wash-Your-Sister Sauce (as long as it is a VERY good brand).
