Banana Protein Pancakes

Two-ingredient base, but loaded with protein. Tastes like real pancakes. Great weekend breakfast.

Two-ingredient base, but loaded with protein. Tastes like real pancakes. Great weekend breakfast.

Ingredients

  • 1 ripe banana, mashed
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 2 tbsp old-fashioned oats (blended to flour)
  • 1 tsp baking powder
  • ½ tsp cinnamon

Cooking spray

  • Topping: ½ cup mixed berries, 1 tbsp Greek yogurt (as syrup sub)

Directions

Blend or mash banana until smooth.

  1. Whisk in eggs, protein powder, oat flour, baking powder, and cinnamon.
  2. Batter should be pourable — add 1 tbsp almond milk if too thick.

Heat pan to medium. Spray with cooking spray.

  1. Pour small pancakes (¼ cup each) into pan. Cook 2–3 minutes until bubbles form.
  2. Flip and cook 2 minutes more. Makes about 4–5 small pancakes.
  3. Top with mixed berries and a dollop of Greek yogurt instead of syrup.

Notes

A ripe (brown-spotted) banana makes these naturally sweeter and binds the batter better. Use the blender-method for the smoothest batter — blend banana, eggs, protein, oat flour, baking powder, and cinnamon all together.
